proper在这里意思是"正规的"，"正宗的"。

02. Spicy 1 crayfish
麻辣小龙虾
由于西方人不怎么吃麻味，所以麻辣可简单地说成spicy就可以了。如果非得要翻译"麻"，比较地道的说法是tongue-numbing或mouth-numbing，字面意思是让舌头或让嘴有麻木的感觉。此外，"小龙虾"不能说成little lobster，小龙虾和龙虾不是同一物种，只是形状类似。
03. Lamb hot pot
涮羊肉
"羊肉"有两种翻译方法，mutton和lamb，mutton是成年羊的肉，而lamb是小羊羔的肉。"羊肉串"一般翻译为lamb kebabs。

05. Yan Du Xian soup
腌笃鲜
江南地区的汉族特色菜肴，主要食材是春笋和五花肉。"腌"就是咸，"笃"是用小火炖，"鲜"就是新鲜。

07. Sugar-coated haws (Candied haw/tong hu lu)
糖葫芦
sugar-coated是"糖衣的""糖裹的"，haw是山楂果，糖葫芦其实就是裹着糖的山楂果。顺便提一下，"山楂树"是hawthorn 2，曾经有一部电影叫《山楂树之恋》，就被翻译为Under the Hawthorn Tree。
08. Stinky tofu
臭豆腐
有些地方也翻译为smelly tofu。
stinky意思是"发臭的"，来自于动词stink 3(发出臭味)。"脚臭"一般要用复数feet，如：

09. Shanghai hariy crab 4
上海大闸蟹
大闸蟹的钳子上长有毛，所以翻译为hairy crab。
10. Duck blood soup with vermicelli
鸭血粉丝汤
vermicelli是(意大利)细面条的意思。如果想说得更清楚，"粉丝"可以叫Chinese vermicelli，但不要说成fans啊!*_*

13. Bullfrog poached in chilli oil (Sichuan boiled bullfrog)
水煮牛蛙
poach是"炖"或"煨"，chilli是"辣椒"。虽然说"水煮"，但其实是在水和油的混合物中煮。
14. Boiled chicken chops served cold (cold chopped chicken)
白斩鸡
chop是"带骨头的肉条"，是可数名词，如猪排骨就是pork chops，因为提到排骨的时候一般是多块，所以要用复数，请看以下例句：

山楂

- The stink of the rotten fish turned my stomach.腐烂的鱼臭味使我恶心。
- The room has awful stink.那个房间散发着难闻的臭气。
