I've watched with fascination 2 as in a few short years a food revolution has taken place across northern Europe with people in Norway, Denmark, Finland and Sweden rediscovering a lost food culture. Right now I'm lucky enough to be documenting this for a television series, a project that's taking me through all of those countries.
