Let’s have a little taste. Let’s do the traditional one first, so this is the bacon that I smoked in the cupboard. Mmm, nice sort of wardrobe flavor… actually,that smoke has done its job, and it’s really penetrated 1 the bacon. And this is the bacon with the liquid smoke… well, the funny thing is, it’s really subtle. The meat hasn’t taken on so much smoke, but it’s a lovely subtle flavor. But out of the two, which one would I prefer? Well, in fact I actually prefer the subtle smoky flavor, but I like the traditional way of doing it. I don’t know why,call me old fashioned, but that isn’t bad at all.
